The glue’s moisture remains inside the bottle as long as you close the cap tightly. While it’s in liquid form inside the bottle, it does not stick to the bottle. When you use glue, the moisture evaporates and hardens and sticks.

If you accidentally leave the cap off, it turns into a hard, unusable mess! I’ve done that many times 😉

The glue in glue sticks (Pritt etc) is water soluble, and part of the sticking action is because the glue dries out. If you keep the top on your glue stick, it will remain moist, and able to slide easily out of the tube, If you leave the top off the glue stick, then it will dry out, and it will stick to the inside of the tube.

Interesting question. I think the glue is filled into the bottle in the absence of air or under pressure (too keep the moisture or solvents in the liquid glue) because it is drying that starts the hardening reaction off in the glue. Even if you leave the top off the glue pot the top surface of glue in contact with the air hardens and then protects the rest of the glue below it.
